White Chicken Chili
One of my favorite things to make is chili. Even though it's a 'cold' weather food, I like to make it all year long, especially in my crock pot! I found this pin and made some slight variations to it.
I gathered all my ingredients:
3 cans of white beans
1 can kidney beans
1 can diced tomatoes
1/2 cup salsa
2 tbsp taco seasoning
1/2 tsp cumin
1 tsp oregano
1 chicken breast (large)
I added all the ingredients to the crock pot and mixed them together.
I added 1 large chicken breast and nestled it into the rest of the mixture.
I put it on low before I went to work and by the time I got home, it had been cooking for about 10-11 hours.
At that point, I took the chicken out, shredded it, then added it back to the mixture. I also stirred in 1/2 cup sour cream and 1/2 cup skim milk.
We like to eat our chili on top of rice, so I let the chili cook while I made brown rice. (It took about 30 min for the rice to cook- I left it on low for about 15 minutes, then turned it off for the rest of the time, but left the lid on)
I topped it with a little cheese and it was good to go!
It turned out pretty well, although next time I would add a little more taco seasoning and possibly another small chicken breast.
This serves about 6 (or 4 if you're really hungry!)
